COFFEE CAKE
- Ingredients:
225 grams all-purpose flour
175 grams of sugar
2 pinches of salt
100 grams of soft butter
2 eggs
250ml natural yoghurt
2 tbsp. level teaspoon of baking powder
for the cake crust:
50 grams of butter
50 grams of brown sugar
50 grams of crushed pecans
2 tbsp. heaped tablespoons of flour
Realization
Preheat the oven to 180°C. Butter an 21 cm diameter cake tin and put it in the fridge.
Prepare the crumble. In a bowl mix the brown sugar, flour and pecans. Add the butter and fold it in with the fingertips to obtain coarse crumbs. Cover and refrigerate this mixture.
In a large bowl, mix the butter and sugar until creamy. Add the eggs one by one. Add the yoghurt, then the flour, baking powder, salt and mix.
Pour the batter into the buttered mold and smooth the surface. Sprinkle the surface of the cake with the crumble. Bake for approximately 30 minutes. Check the cooking with the blade of a knife, it should come out dry. Let cool for 15 minutes, then turn out onto the wire rack.
Enjoy your meal! ˜
